Falafel & Beetroot Wrap

INGREDIENTS

  • 3-4 falafel (we used The Cool Gardener Falafel)
  • 1 soft tortilla wrap
  • garlic hummus
  • fresh cos lettuce, chopped
  • purple cabbage, shredded
  • avocado, sliced
  • cucumber, in ribbons
  • Anathoth Farm Beetroot Chutney
  • hemp hearts
  • salt and pepper

METHOD

  1. Bake falafel as per box instructions.
  2. Spread a thick layer of hummus over one side of the tortilla wrap.
  3. Arrange lettuce, purple cabbage, avocado and cucumber ribbons on top of the hummus.
  4. Place cooked falafel on top with dollops of Beetroot Chutne, a sprinkle with hemp hearts and salt and pepper to taste.
  5. Wrap and enjoy!
