Recipe by Olivia Moore – That Green Olive

    Makes one large pizza

    INGREDIENTS

    • Pizza dough for 1 pizza or 1 large pizza base of your choice
    • ⅓ cup Anathoth Farm Pizza Sauce Tomato with Chilli
    • 3 cups cooked leftovers (think bolognese, nacho filling, pasta bakes, sausages, corn fritters, roast veggies etc.) - I used a mixture of cooked mince, mac n cheese, and cooked broccoli
    • 75g mozzarella, grated
    • Sauces and condiments of choice (I used mayonnaise and sriracha)
    • Finely chopped parsley, basil or herbs of choice

    METHOD

    1. Preheat oven to its highest temperature (I used 250°C fan-forced), or prepare a pizza oven.
    2. Stretch pizza dough to your desired thickness and place on a pizza stone or tray. Spread evenly with Anathoth Pizza sauce, and scatter over your desired leftovers. Sprinkle mozzarella evenly over top.
    3. Bake for 7-10 minutes (watch as it can burn easily), or until pizza base is cooked, cheese is melted and browning spots are visible.
    4. Drizzle over sauces and sprinkle over herbs. Season with salt and pepper and serve immediately.
