Pear, Blueberry & Cardamom Bircher Muesli

Bircher muesli is a healthy and hearty breakfast that can be prepared the night before. Filled with nutritious ingredients like Anathoth Farm Blueberry More Fruit, Less Sugar Preserve, rolled oats, fresh pear and seeds, it will be sure to hit the spot!
Make a large batch and store this Bircher muesli in the fridge for an easy ‘grab and go’ breakfast throughout the week.
Serves 2
INGREDIENTS
- 3/4 cup rolled oats
- 1/4 cup desiccated coconut
- 2 tbsp flaxseeds
- 4 dried apricots, chopped
- 1 tbsp LSA
- 1/2 cup milk
- 1/2 cup water
- 1/4 tsp ground cardamom
- Pinch sea salt
- 1 large pear, grated
- 1/4 cup yoghurt
- ⅓ cup Anathoth Farm Blueberry More Fruit, Less Sugar Preserve
METHOD
- In a large bowl or container, combine all ingredients except for the pear, yoghurt and Anathoth Farm Blueberry More Fruit, Less Sugar Preserve. Cover and refrigerate overnight, or at least 4 hours.
- When ready to serve, stir through grated pear and yoghurt. Divide among serving bowls and top with Anathoth Farm Blueberry More Fruit, Less Sugar Preserve, swirling through if desired. Serve topped with extra yoghurt, pear, dried apricots and desiccated coconut.
