Raspberry Galettes
PRINT RECIPE
This is a quick and easy dessert that you can assemble in a few minutes. All you need is flaky puff pastry, Anathoth Farm Raspberry Jam, cooking apples and a lemon. Serve hot with natural yoghurt or ice-cream.
INGREDIENTS
- 1 sheet thawed flaky puff pastry (use gluten free if you prefer)
- ½ cup Anathoth Farm Raspberry Jam
- 2 cooking apples (Granny Smith)
- zest and juice of 1 lemon
- 2 Tbsps water
METHOD
- Pre-heat oven to 180ºC
- Cut pastry sheet into 4 rounds using a large pastry cutter or small saucer as a guide and place on a lightly greased baking tray
- Peel and core apples, quarter and slice thinly
- Sprinkle over grated lemon zest and juice
- Spread Raspberry Jam over the pastry, reserving 2 Tbsp for glazing
- Arrange apple slices, overlapping, on top of jam
- Bake until apples browned and pastry crisp - approx 20 minutes
- Warm remaining jam and water together and brush over apple slices
- Serve with a spoonful of natural yoghurt or vanilla ice-cream
