Steamed Microwave Puddings

INGREDIENTS


    METHOD

    1. Lightly grease 4 microwave-safe moulds (½ cup capacity) or mugs with a little butter. Place 1 tablespoon of Lemon Curd in the bottom of each mould.
    2. Cream the butter and sugar together in a bowl until creamy. Add the egg and Lemon Curd and mix well.
    3. Sift the flour and baking powder and mix.
    4. Pour into the prepared moulds and microwave on high for 4-5 mins.
