Steamed Microwave Puddings

INGREDIENTS
- 4 Tbsps Anathoth Farm Lemon Curd (or your favourite Anathoth Farm Jam)
- 100g butter
- ¼ cup sugar
- 1 egg
- 1 Tbsp Anathoth Farm Lemon Curd
- 1 cup flour
- 1 tsp baking powder
METHOD
- Lightly grease 4 microwave-safe moulds (½ cup capacity) or mugs with a little butter. Place 1 tablespoon of Lemon Curd in the bottom of each mould.
- Cream the butter and sugar together in a bowl until creamy. Add the egg and Lemon Curd and mix well.
- Sift the flour and baking powder and mix.
- Pour into the prepared moulds and microwave on high for 4-5 mins.
