Sticky Caramel Brioche Buns

With buttery caramel and jam, homemade brioche buns take on a delicious flavour twist!







  • 1 tsp sugar
  • 1 tsp dried yeast
  • 70ml warm milk
  • 500g high-grade flour
  • 1 tsp salt
  • 5 eggs
  • 225g butter, softened


Butter Caramel Mix

  • 150g butter
  • 150g soft brown sugar
  • 1 tsp ground cinnamon


  1. Place sugar and dried yeast in a small bowl and pour in the warm milk. Leave in a warm place until the yeast is frothy, about 5 minutes.
  2. Sift flour and salt into the bowl of an electric mixer fitted with a dough hook. Add the eggs and yeast mixture and mix until dough is smooth and shiny. Add the butter in stages, ensuring that the butter has been mixed through completely at each addition.
  3. Place dough in a lightly oiled bowl, cover with plastic wrap and a clean tea towel and leave in a warm, draught-free spot for 1½ hours until the dough has doubled in size.
  4. Preheat the oven to 190°C.  Line a large shallow baking dish well with foil and baking paper.
  5. Turn dough out onto a lightly-floured bench top and roll into a rectangular shape about 3mm thickness.
  6. Spread Boysenberry Jam over the surface then sprinkle over the sugar and cinnamon. Roll up (starting from the longest side) as you would a swiss roll, ending with seam down.  Cut into 10 pieces.
  7. Melt together butter, sugar and cinnamon. Spread over baking paper on the prepared tray. Place brioche on top, placing them close together and seams inwards. Cover with plastic wrap and leave to prove until nearly doubled in size, about 25 minutes.
  8. Remove plastic wrap and place in the oven to bake for 25 minutes.
