Vegan Lamington Pie

Anathoth Farm More Fruit, Less Sugar Red Berry has 10% more NZ-grown fruit and 25% less sugar than our traditional jams, making it a great choice to use in this Vegan Lamington Pie recipe.

Serves 10-12

INGREDIENTS

BASE

  • 150g almonds, roasted
  • 175g coconut flakes
  • 1/2 cup coconut oil, melted
  • 50g cocoa
  • 1/2 cup Anathoth Farm More Fruit, Less Sugar Red Berry preserve (plus another ½ cup for spreading)
  • 1/4 cup water
  • Generous pinch salt

FILLING

  • 150g cashews, soaked overnight
  • 150ml coconut milk
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/2 cup coconut oil, melted

METHOD


  1. To make the base, pulse all ingredients in a food processor until a dough forms. Press into the base of a greased cake/pie dish and evenly spread over ½ cup More Fruit, Less Sugar Red Berry preserve. Chill while you make the filling.
  2. To make the filling, blend all ingredients until smooth. Pour over prepared base and chill for 4 hours or overnight. To serve, dollop over extra red berry preserve and sprinkle over some coconut flakes. Store leftovers in the refrigerator.
