Smoked Chicken & Avocado Penne Salad

This Smoked Chicken & Avocado Penne Salad with Anathoth Farm Caramelised Onion & Parmesan is the perfect lunch to take to work, or a simple light meal that the whole family will enjoy this Summer.
Ingredients
- 250 g Dried penne pasta
- 200 g Smoked chicken, shredded
- 1/4 cup Anathoth Farm Caramelised Onion Relish
- Balsamic vinegar
- 2 Tbsp Extra virgin olive oil
- 1 Avocado, diced
- 1/4 cup Parmesan, grated
- 1 cup Spinach, roughly torn
- 1/2 Red onion, thinly sliced
Method
- Cook pasta according to packet directions.
- In a large salad bowl, whisk together relish, balsamic vinegar, and olive oil until combined. Add pasta along with remaining ingredients and toss to fully distribute.
- Serve chilled or at room temperature.
