Caramelised Onion, Cheese & Bacon Stuffed Kūmara

These cheese & bacon stuffed kūmara with Anathoth Farm Caramelised Onion Relish are the ultimate comfort food with a Kiwi twist.
Ingredients
- 4 medium sized orange kūmara
- 200 g Streaky bacon, chopped
- 1/2 cup Anathoth Farm Caramelised Onion Relish
- 1 & 1/2 cups Cheddar cheese, grated
- Salt and pepper, to taste
- To serve Greek yoghurt
- To serve Italian parsley
Method
- Preheat the oven to 200℃.
- Prick the skin of each kūmara a dozen times and place on a baking tray lined with baking paper. Bake for 60 minutes.
- Allow the kūmara to cool enough to handle. Cut lengthways in half, then scoop out the flesh with a spoon, leaving approximately 1/2cm of flesh around the skin.
- Mix the kūmara flesh and caramelised onion relish using a fork to mash as you go. Stir through half the bacon and half of the cheese.
- Spoon the filling back into the kūmara cases evenly. Sprinkle with the remaining cheese and bake for 25 minutes.
- Top with the remaining bacon, a dollop of Greek yoghurt, and some chopped parsley before serving.
