Muffin Splits with Whipped Lemon Feta

A tasty weekend breakfast to add to your menu this Summer, using Anathoth Farm Caramelised Onion Relish, and topped with bacon and cheese.
Makes 2 whole muffin splits or 4 halves.
Ingredients
- 50 g Mānuka-smoked shoulder bacon
- 100 g Feta
- 1 Tbsp Olive oil
- 1, 1/2 Tbsp Lemon juice
- 1 tsp Lemon zest
- 4 Muffin splits, separated
- 1/2 cup Anathoth Farm Caramelised Onion Relish
Method
- Heat a non-stick frying pan over medium-high heat. Add the bacon and cook for 4-5 minutes, flipping halfway, until crisp. Remove from heat and chop into small pieces.
- In a small food processor, blend feta, olive oil, lemon juice and lemon zest for 1 minute until smooth.
- When ready to serve, toast muffin splits. Spread with butter if desired, then divide the caramelised onion relish among each muffin split, followed by whipped lemon feta, bacon pieces and a sprinkle of lemon zest. Enjoy!
