Spiced Plum & Almond Loaf Cake

Ingredients

  • 150 g Butter
  • 150 g Caster sugar
  • 150 g Almond meal
  • 150 g Self-raising flour
  • 1 tsp Ground cinnamon
  • 3 Large eggs
  • 1/2 cup Anathoth Farm Plum Jam
  • 2 Tbsp Sliced almonds

Method

  1. Preheat the oven to 180°C and line a loaf pan with baking paper.
  2. With an electric beater/mixer beat the butter and caster sugar together in a large bowl until light and fluffy.
  3. Add the eggs one at time while still beating, and scrape the bowl to occasionally.
  4. Add the almond meal, self-raising flour, cinnamon to the mixture, mixing until just combined. The mixture will be quite thick.
  5. Spoon half of the mixture into the prepared pan and spread with the back of a spoon until it reaches the edges.
  6. Spread the jam over the mixture, leaving a 2cm border.
  7. Spoon on the remaining mixture and distribute as evenly as possible.
  8. Sprinkle the flaked almonds over the top and bake for 45-50 minutes, or until a skewer inserted into the centre comes out clean.
  9. Allow to cool completely in the tin before serving.
