Spiced Plum & Almond Loaf Cake

Ingredients
- 150 g Butter
- 150 g Caster sugar
- 150 g Almond meal
- 150 g Self-raising flour
- 1 tsp Ground cinnamon
- 3 Large eggs
- 1/2 cup Anathoth Farm Plum Jam
- 2 Tbsp Sliced almonds
Method
- Preheat the oven to 180°C and line a loaf pan with baking paper.
- With an electric beater/mixer beat the butter and caster sugar together in a large bowl until light and fluffy.
- Add the eggs one at time while still beating, and scrape the bowl to occasionally.
- Add the almond meal, self-raising flour, cinnamon to the mixture, mixing until just combined. The mixture will be quite thick.
- Spoon half of the mixture into the prepared pan and spread with the back of a spoon until it reaches the edges.
- Spread the jam over the mixture, leaving a 2cm border.
- Spoon on the remaining mixture and distribute as evenly as possible.
- Sprinkle the flaked almonds over the top and bake for 45-50 minutes, or until a skewer inserted into the centre comes out clean.
- Allow to cool completely in the tin before serving.
