Raspberry Brownie Doughnuts

These Raspberry Brownie Doughnuts are a perfect treat to bake with the kids. They’re vegan, gluten-free, and delicious!
Ingredients
Doughnuts
- 100g Almond meal
- 50g Cocoa powder
- 50g Cornflour
- 2 tsp Baking powder
- 1/2 tsp Salt
- 1 cup Anathoth Farm Raspberry Jam
- 1/3 cup Coconut oil
- 1 Tbsp Ground flaxseed
- 3 Tbsp Water
Icing
- 1 cup Anathoth Farm Raspberry Jam
- 1/2 cup Almond meal
Method
- Preheat oven to 180°C. Lightly grease an 8-hole doughnut pan.
- In a large bowl, combine all dry ingredients. Add wet ingredients and mix to combine.
- Divide among prepared doughnut moulds and bake for 15 minutes. Allow to cool in tins for a remaining 10 minutes, before gently removing and transferring to a wire rack.
- To make the icing, blend Anathoth Farm Raspberry Jam and almond meal with a stick blender until smooth.
- When doughnuts have completely cooled, spread with icing. Place a few dots of raspberry jam on top of each, and swirl to create a marbled effect.
