Raspberry Brownie Doughnuts

These Raspberry Brownie Doughnuts are a perfect treat to bake with the kids. They’re vegan, gluten-free, and delicious!

Ingredients

Doughnuts

  • 100g Almond meal
  • 50g Cocoa powder
  • 50g Cornflour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Anathoth Farm Raspberry Jam
  • 1/3 cup Coconut oil
  • 1 Tbsp Ground flaxseed
  • 3 Tbsp Water

Icing

  • 1 cup Anathoth Farm Raspberry Jam
  • 1/2 cup Almond meal

Method

  1. Preheat oven to 180°C. Lightly grease an 8-hole doughnut pan.
  2. In a large bowl, combine all dry ingredients. Add wet ingredients and mix to combine.
  3. Divide among prepared doughnut moulds and bake for 15 minutes. Allow to cool in tins for a remaining 10 minutes, before gently removing and transferring to a wire rack.
  4. To make the icing, blend Anathoth Farm Raspberry Jam and almond meal with a stick blender until smooth.
  5. When doughnuts have completely cooled, spread with icing. Place a few dots of raspberry jam on top of each, and swirl to create a marbled effect.
