Smashed Avocado Toast with Hot Chilli Relish, Bacon, Poached Eggs & Parmesan

Kick-start your day with this Smashed Avocado Toast, sure to keep you satiated.
Ingredients
- 2 Egg
- 2 Rashers Streaky bacon
- 1 Avocado
- 1/4 tsp Salt
- 1/4 tsp Ground black pepper
- 2 slices Sourdough, toasted
- 3 Tbsp Anathoth Farm Hot Chilli Relish
- 25 g Parmesan, grated
Method
- Bring a medium pot of water to the boil, then reduce heat to a low. Gently crack eggs and add to the pan. Cook for 4 minutes or to your liking. Remove with a slotted spoon and keep warm.
- Meanwhile, fry bacon in a non-stick frying pan over high heat, until crisp.
- Mash avocado with salt and pepper. Divide among both pieces of toast, gently spreading to the edges. Top with bacon, eggs and Hot Chilli Relish. Sprinkle over parmesan and serve immediately.
